Curried Chicken Salad - Camp Jump Start

Recipe of the Week: Curried Chicken Salad

Makes 10 servings
1 cup fat-free mayonnaise
1 cup plain non-fat yogurt
2 T Honey
1 T Lemon juice
1 T Curry powder
6 cups Chopped cooked chicken, cooled
3 cups Green grapes, halved
1 ½ cups Dried cranberries
¾ cup Slivered almonds, toasted
¾ cup Diced celery
Butter Lettuce

Mix together first five ingredients in a medium bowl.
In a large bowl, toss together chicken, grapes, cranberries, almonds, and celery
Pour dressing over chicken mixture and toss
Refrigerate for at least one hour
Serve on a bed of butter lettuce.
